Chicken macaroni salad

Ingredients
2 cups uncooked elbow or spiral macaroni
½ cup fresh green peas
2 cups cut-up cooked chicken
¾ cup mayonnaise or salad dressing
½ cup Cheddar cheese (optional)
½ cup spring onions (about 5 medium)
½ cup sliced celery (about 1 medium stalk)
1/3 cup pickle relish
3 to 4 cups bite-size pieces of lettuce (about ½ medium head)

Method
1. Cook macaroni as directed on package without the salt. Drain and rinse.

2. Rinse with cold water and add the cooked peas and mix together with the macaroni and remaining ingredients minus the lettuce.

3. Cover and refrigerate for about 4 hours or until chilled. Serve on lettuce.
