RECIPE: Dried Bean Soup

Dried Bean Soup

Ingredients
Serves 6
500 gm dried beans 4 whole cloves
1 bay leaf
4 peppercorns
Boiling water
1 diced carrot
3 ribs celery with the leaves chopped
1 sliced onion
2 cloves minced garlic
1 tablespoon chopped basil
2 tablespoon chopped cilantro 4 sprigs chopped dodo
4-6 medium mashed potatoes Salt & pepper to taste

METHOD

Boil the beans adding the bay leaf, cloves, peppercorns and salt. During the last half hour add the diced carrot, celery, basil, cilantro, onion, garlic, dodo and the mashed potatoes.
When cooked process the soup in a food processor and if need be you can thin it with some boiling water or milk
