Baked fish fillets piquant

Preheat the oven at 424degrees FH

½ cup dry white wine such as vermouth
¼ cup white wine vinegar
4 tbsp light soy sauce
¼ cup water
Salt & pepper to taste
1 tbsp crushed garlic
1 small grated onion
½ kg fish fillets
Bread crumbs
½ cup mayonnaise
½ cup sour cream
2 tbsp finely chopped spring onions

1.Combine the wine, vinegar, water, salt & pepper, soy sauce, garlic and grated onion and pour over the fish fillets and marinade for 1 to 2 hours.
2. When you are ready to prepare the fish, drain thoroughly on paper toweling and coat both sides of the fillets with the bread crumbs.
3.Arrange the fillets in single layer in a lightly buttered shallow baking dish.
4. Combine the mayonnaise, sour cream and spring onion and spread evenly over the fish. Cover with a thin layer of crumbs and dust with paprika and bake in a hot oven for about ten minutes or until fish is done. Serve with lemon wedges.
