Chicken Noodle Soup

Chicken Noodle Soup

Ingredients
1 chicken raw or cooked with the giblets but not the liver
1 small sliced onion
1 clove crushed garlic
1 large sliced carrot
1 stalk chopped celery
2 to 3 sprigs fresh parsley
Salt and pepper to taste
2 oz fine vermicelli or other fine pasta
1 tablespoon finely chopped fresh parsley

Method
i)Cover chicken with cold water and bring to a boil. Skim off any scum that rises to the surface.
ii)Add the onion, garlic, carrot, celery and parsley sprigs and simmer gently until the chicken is tender.
iii)Strain and cool the chicken and stock. You may choose to refrigerate overnight and remove any excess fat from the surface.
iv)Measure around 4 cups of the stock into a large saucepan and reheat. Add the salt and pepper.
v)Combine the vermicelli into a pan of boiling salted water and simmer for 4 to 5 minutes then drain and rinse.
vi)Place the drained pasta or vermicelli in a soup tureen and cover with the hot soup and sprinkle with the parsley.
