Coconut ice cream

Ingredients

Serves 8
400ml evaporated milk
400ml condensed milk
400ml grated nutmeg
1 teaspoon almond essence
Slices of lime for garnishment

1. Mix the evaporated milk with the condensed milk and the coconut milk in a large bowl. Stir in the nutmeg and almond essence
2. Chill the above in a freezer for a couple of hours until the mixture becomes partially frozen.
3. Remove from the freezer and put in an electric mixer and twirl until it becomes fluffy and doubles in volume. You may also use a hand whisk.
4. Pour the contents into a freezer container, cover and freeze. Garnish with slices of lime and shredded coconut
