Deep fried tangy tilapia

You will enjoy the tangy flavor the mixture of orange and lime juice gives to this delicious deep fried tilapia.

Ingredients (Serves 4)
1 large tilapia
Juice of 1 orange
Juice of 3 limes
1 large lemon, quartered
2 egg yolks
1 tsp turmeric
1 clove garlic
2 tsp ground ginger
Oil for deep frying
1 onion
Salt

Method
1. Have the fish gutted, scales removed and chopped into four pieces
at the place of purchase. Take it home as soon as possible, wash well under running water and refrigerate if using on the same day or freeze in plastic container, as fish spoils quickly and can cause food poisoning.

2. If frozen, thaw completely at room temperature or if in a hurry,
put the fish in a polythene bag and place the bag in a pan of cold water. Meanwhile, crush the garlic, finely chop the onion and put in bowl. Add the orange and lime juice, ginger, turmeric, well beaten egg yolks and 1 tsp salt. Mix well, and then pound using pestle and mortar.

3. Rub salt on the fish pieces and put in a shallow dish. Coat well
with the egg mixture, cover and leave to marinate for 1 hr.

4. Heat the oil in a karahi or deep-fryer, until it is very hot. Fry
the fish one or two pieces at a time, depending on the size, for about
12 minutes until golden brown.

5. Drain and serve hot with a fresh vegetable salad and lemon quarters
