Enjoy chicken salad

Salads are one of the best ways of making sure you get the benefits of the rich supply of vitamins and minerals that your body needs to be healthy. Adding chicken and low fat mayonnaise makes salads really delicious, especially for children who usually hate eating vegetables.

In order to keep this salad fresh and crispy, it’s best to make it just before serving it and not well before hand. Alternatively, chop the vegetables and keep in containers in the fridge and mix with the dressing, just before serving.

Celery is available from Nakasero Market and other large supermarkets at between Shs2,000 and Shs3,000. You only need one plant for this recipe, keep the rest in the fridge. This salad can also be used to make fresh or toasted sandwiches. For larger quantities simply double the recipe.

Ingredients
3 cups cold, cooked chicken, no skin or bones
½ cup onions, finely chopped
½ cup cabbage/lettuce finely shredded
½ cup carrots, grated
½ cup chopped celery, stalks (optional)
2 tbsp lime juice
3tbsp or more mayonnaise
Salt and pepper

Method

1. Mix the grated carrots with the cabbage or lettuce, so that it is evenly distributed.
2. Next sprinkle over the onions and celery, if using and mix well.
3. Scatter the chicken pieces over the salad and mix well.
4. Mix a generous pinch of the black pepper, with 1 tsp salt. Add to the lime juice and stir well. Pour the lime juice mixture into the mayonnaise and mix thoroughly well.
5. Finally add the mayonnaise mixture to the vegetables, adding a little more mayonnaise if necessary. The salad should not be too wet, just moist. Serve straight away.
