Green pepper, onion strata

Served with fresh tomato salsa
Vegetable oil to grease the baking pan
3-4 onions sliced into thin slices, 3-4 crushed garlic cloves
Some olive oil
Large green pepper
One rib of celery, finely chopped
1/2 teaspoon of mixed herbs
1 large ripened green pepper which should be fire engine red
12 very thin slices brown bread cut into 3/4 inch squares
1/4 kg of freshly grated Paramount cheese
4 whole eggs, 4 egg whites
590 millilitres of homogenised and pasteurized milk
1/4 tumpeco packed fresh parsley leaves finely chopped

METHOD
Lightly grease a baking pan that can accommodate the above ingredients. Fry the onions, some of the garlic until the former become translucent. At this point, stir in the green and red peppers as well as salt and pepper to taste. Continue to cook over low heat until ready, this should not take more than five minutes.
Spread half of bread squares evenly in the baking tray and top with half of the vegetables. Sprinkle some of the grated Paramount cheese evenly over the vegetables and top with the remaining bread and vegetables.
In a bowl, whisk together the whole eggs, the whites, parsley, mixed herbs and celery, the rest of the garlic as well as salt and pepper to taste and then pour solution evenly over the bread and vegetables. At this point you will need to chill the strata covered at least 3 hours.
When ready to heat, remove from the fringe and preheat the oven to 375 degrees FH, which if I am not mistaken is around 200 degrees C. Sprinkle a nice generous layer of grate cheese
And bake for about 50 minutes, or until puffed and a nice golden brown.
In the traditional manner one would serve the strata topped with The fresh tomato salsa. However, you may choose to serve the Latter on the side. Either way, strata is very dull without salsa.

Fresh tomato salsa
6 ripe tomatoes, seeded and coarsely chopped, 2-3 finely chopped onions
2 spring onions finely chopped
2 small sprigs of fresh finely chopped cilantro and 1 tablespoon fresh lemon or lime juice
Chilli sauce to taste
METHOD
In a small bowl combine the above ingredients and add a bit of salt to taste. Chill covered and serve when ready.
