Pineapple crumble

Pineapple crumble is truly an amazing dessert! Not only is it delicious, it is also very easy to make and the ingredients are readily available. You may modify the recipe by baking the pineapple with other fruits, such as mango or locally grown pears and adding chopped roasted nuts, (skins removed) to the topping, to make it extra crunchy.

Ingredients
1 large ripe pineapple 200g
salted butter/margarine
75g soft brown sugar 200g wheat flour
150g white sugar Juice of 1 lime
A pinch of salt 1 tsp cinnamon
Extra fat for greasing

METHOD

1. Grease an oven-proof dish.

2. Wash the pineapple, dry and cut into medium-size rings with a sharp
knife. Run the tip of the knife along the inner side of the ring close to the flesh to remove the skin. Remove any black spots. Remove the hard core in the centre and discard. Chop pineapple flesh into 6mm cubes. Put the chopped pineapple into a bowl, mix well with the white sugar and lime juice. Tip into the greased oven-proof dish, spreading it evenly along the bottom of the dish.

3. Pre-heat the oven to 200C/ Gas mark 6.

4. Sift the flour and mix with the salt, cinnamon and brown sugar. Rub
the butter or margarine into the flour mixture with your finger tips, until the mixture looks like fine breadcrumbs.

5. Spread the flour mixture evenly on top of the pineapple.

6. Bake for 40-45 minutes or until golden-brown on top. Serve hot or cold.
