Recipe: Meatball curry

Although many associate the word curry with hot chillies, curries do not necessarily have to be hot. They are however, cooked with a number of spices and it is these spices that give curries their great flavour. When cooking with dried ground spices, always use them in moderation as they are stronger than the same quantity of fresh spices.

Ingredients Serves 4
For the meatballs
½ kg lean minced meat
15ml (1 tbsp) plain yoghurt
60ml (4 tbsp) wheat flour 45ml (3 tbsp) onions, finely chopped
1 tbsp beef masala 2 cloves garlic, crushed
2 tsp ground cumin 15ml (1 tbsp) coriander, chopped
1 tsp ground turmeric
1 tsp black pepper, freshly ground
1 tbsp Royco
½ tsp salt
For the curry sauce
15ml (1 tbsp) tomato .paste 30ml (2 tbsp) plain yoghurt
1 chicken stock cube
30ml (2 tbsp) ghee/butter
1 onion, finely chopped
2 cloves garlic, crushed
30ml (2 tbsp) curry powder
1 tbsp fresh coriander, chopped
600ml (2½) cups hot water 1 tbsp Royco
Method
1. Wash and dry your hands, then put the minced beef into a large bowl with all the ingredients for the meatballs and mix well with your hands. Roll the mixture into small balls and put aside on a floured plate.
2. To make the curry sauce: Dissolve the stock cube in the hot water and put aside.
3. Heat the ghee/butter in a saucepan over medium heat and fry the onion until they just begin to colour. Add the garlic and continue frying until golden. Reduce the heat and add the curry powder and cook for a few minutes stirring.
4. Add the tomato paste, yoghurt, coriander and royco and cook while stirring for a few minutes. Add enough chicken stock to make a thick sauce and continue cooking for a few minutes. Gradually add in the rest of the stock and simmer gently for 10 minutes.
5. Add the meatballs and continue to simmer until they are cooked thoroughly. Do not stir while the meatballs are in, but occasionally shake the pan gently, to move the meatballs around. Add a little water, if sauce becomes too thick.
6. Serve with a fresh salad, rice and chapatti or mashed potatoes.
