Triple decker sandwich

This simple dish makes a tasty side dish that can also be used as a main dish served with a fresh green salad for a light supper. Add sliced hard boiled eggs to the salad to make the meal balanced.

Ingredients
4 slices of bread
6 lettuce leaves, shredded
½ a small carrot, grated
¼ small cucumber, sliced
¼ small tomato, sliced
2 heaped tbsp mayonnaise
Butter or margarine
4 slices of boneless, cooked chicken
A pinch of salt

Method

STEP 1: In a small bowl mix the grated carrot with 1 level tbsp mayonnaise and put aside. In a separate bowl mix together the shredded lettuce,chicken and the rest of the mayonnaise.
STEP 2: Butter one side only, of all the four slices of bread.
STEP 3: Spread one buttered slice with the grated carrot and cover firmly with another slice of bread, buttered side facing the grated carrot. Cover this slice of bread with the chicken and lettuce mixture and cover this with another slice of bread, buttered side covering the chicken mixture. Top this slice of bread with slices of tomato and cucumber. Sprinkle on a little salt. Finally, cover with the fourth piece of bread, buttered side over the cucumber and tomato slices.
STEP 4: Press the sandwich down a little and slice using a bread knife or sharp knife. Serve with a hot drink.
