Easy sesame ginger slaw

Before preparing a salad, it is important to remove pesticides from the vegetables to make them safe to eat.

To do this you will need plenty of clean, previously boiled cold water and plain white vinegar. First rinse the vegetables thoroughly in the clean water to remove any dirt and grit.

Next, fill a large container with four parts water to one part vinegar, wash and submerge the vegetables under the mixture for 20 minutes.

Finally rinse the vegetables in the clean, previously boiled, cold water and leave to drain in a colander or use a vegetable spinner to remove droplets of water on the vegetables.

Ingredients
3 cups red cabbage, finely shredded
3 cups green cabbage, finely shredded
1 cup grated carrots
4 spring onions including leaves, sliced
4 tbsp roasted sesame (simsim)

For the dressing
¼ cup apple cider vinegar
1 tbsp sesame or olive oil
1 tbsp honey
1 large clove garlic, finely grated
1 tbsp soy sauce
1 tbsp finely grated ginger
¼ tsp fresh ground black pepper
½ tsp salt
½ cup fresh coriander or parsley, finely chopped

Method
1.Before shredding and slicing the vegetables, wash them in cold, previously boiled water and then submerge in one part vinegar and four parts water for 20 minutes. Rinse with plenty of cold, previously boiled water and leave to drain.
2. Meanwhile, make the dressing by placing in a small bowl, the apple cider vinegar, soy sauce, honey, sesame or olive oil, garlic, ginger, black pepper, coriander or parsley and salt. Whisk to combine well. Taste for salt and add a pinch more, if necessary.
3. In a large bowl add the red and white cabbage and mix well. Add the carrots, spring onions, and 2 tbsp of the roasted simsim seeds.
4. Whisk the dressing once more and then pour it over the salad. Toss the salad well, so that all the vegetables are well coated with the dressing.
5. Tip the salad in the serving bowl and sprinkle with the remaining simsim, cover with cling film and chill until ready to serve.
