Roasted pork ribs

Ingredients
2 kg lean pork spare ribs
2 onions
2 cloves garlic
3 tbsp tomato paste
4 tbsp lime juice
4 tbsp red wine vinegar
1 tbsp Royco
4 tbsp honey
1 tbsp Soy sauce
1 level tsp salt

Method

1. Preheat the oven to 200C/400F/ Gas 6. Put the pork ribs in a large container. Add the salt and mix well. Place the pork in a large roasting pan and bake for15 minutes on one side. Turn the ribs and bake on the other side for another 15 minutes. If you are using a charcoal grill, wait until the coals have a fine whitish ash over them before grilling. Brush the grill with a little oil and grill for 15 minutes on each side.

2. Meanwhile finely chop the onions and garlic and then crush the garlic. Put in a saucepan. Dissolve the Royco in the lime juice and mix well. Add to the onions and garlic with the soy sauce, tomato paste, vinegar and honey. Stir well and bring to the boil and then lower the heat and simmer for 5 minutes.

3. Remove the ribs from the oven and reduce the oven to 180C/350F/ Gas 4. Spoon half the sauce over the ribs, covering them well and bake for 20 minutes. Turn them over, baste with the remaining sauce and cook for 20-25 minutes. Do the same with the ribs grilled over charcoal.

4. Serve hot with a fresh salad.
