Steak with fried eggs

Ingredients
4 x 225g (8oz) trimmed beef fillet steaks each with gently doused in seas salts and preferably ground black pepper
2 tablespoons olive oil
55g (2oz) unsalted butter
4 eggs
1 shallot, finely chopped
2 tablespoons chopped fresh parsley
35g (1 ¼ oz) Parmesan cheese shavings

Method

1. Season the steaks with salt and pepper on both sides and set aside. Pour the oil into a large frying pan and sauté the meat over high heat until brown and crispy on both sides, allow about 3 minutes per side.

2. Remove the steaks from the frying pan and allow them to rest on a plate. However, if they are thick in size, I would suggest that you place them in a preheated medium hot oven 180d Celsius or 350d FH for4-6 minutes.

3. In the meantime, melt the butter in a medium non-stick frying pan over a medium heat and crack each egg directly into the pan and season with salt and pepper. Cook until the egg whites are set but the yolks are still soft, about 2-3 minutes. As soon as they are done, place each steak on a plate and top with an egg.

4. Working fast over a medium heat, add the shallot to the leftover butter in the pan and swirl the pan around to ensure that the shallot cooks lightly in the heat of the butter. Drizzle the shallot butter on top of each plate and garnish with the parsley and Parmesan shavings.
