Savoury deep fried fish bites

Ingredients
3 tablespoon chopped fresh fennel, dill, and parsley & mint
2 eggs beaten
1 cup115g dried bread crumbs Oil for deep-frying
½ kg fillet of tilapia cut into strips
For the sauce
3 tablespoons plain yoghurt 6 tablespoon mayonnaise
2-3 tablespoons lime juice 2 tablespoons chopped cilantro
1 tablespoon each chopped capers & gherkins
Salt & pepper

1. To make the sauce stir the yoghurt, mayonnaise and the limejuice together then add the herbs capers, gherkins and salt and pepper to taste.
2.Toss together the herbs, breadcrumbs and the salt and pepper and set aside. Set the flour on a plate and set aside. When you are ready to deep fry the fish then proceed as follows.
3.Put the fish in the flour and toss to coat and then shake off the excess flour then dip the fish in the egg wash then roll it in the herbed bread roll.
4.Heat the oil in a deep fryer to 375˚F or 190˚C and deep fry in batches for about a couple of minutes or until they become golden brown.
5.Drain on paper towel and serve warm with the sauce.
